Ingredients (About 12 falafels)

 1 cup dried chickpeas (definitely not canned)

• ½ onion, coarsely chopped

• 3 cloves garlic

• ½ cup fresh parsley

• ½ cup fresh coriander (cilantro)

• 1 tsp ground cumin

• 1 tsp ground coriander

• ½ tsp baking powder

• 1 tsp salt

• ¼ tsp black pepper

• 2 tbsp flour (or gram flour)

• 1–2 tbsp olive oil (for brushing or spraying)

Pro Tip: Always use dried chickpeas that have been soaked overnight—canned chickpeas are too soft and will make your falafels fall apart.

 

Instructions

1. Soak the Chickpeas

In a large bowl, place the dried chickpeas and fill it with plenty of water.

Allow soaking for 12 hours at minimum (overnight), as they will double in size.

Drain and dry before using.

2. Prepare the Mixture

In a food processor, place the soaked chickpeas, onion, garlic, parsley, coriander, cumin, baking powder, salt, and pepper.

Give a few pulses to get a coarse, grainy texture that holds together but isn't sticky.

Add some flour, if required, to bind the mix.

3. Shape the Falafel

Using hands or a spoon, take small scoops of the mixture and shape the scooped portion into balls or patties.

(Optional) Chill in the fridge for about 30 minutes to firm up.

4. Preheat the air fryer.

Preheat air fryer to 190°C/375°F for 3 minutes.

5. Air fry

Brush falafel with olive oil.

Arrange the falafel in a single layer in the air fryer basket.

Cook at 375°F for about 14–15 minutes; gently flip halfway to brown evenly.

6. Serve and enjoy

Serve warm on a plate with tahini sauce, garlic yogurt, or inside a pita with salad, cucumber, and tomato.

Drizzle olive oil and squeeze lemon juice on top for a refreshing Mediterranean flavor.
